Suzuki Beets

Beets are one of my favorite root vegetables.

They’re sweet, a little earthy, and have a great color to them.

Super lucky to have Suzuki-san growing them here in Omori. I always really liked beets, especially on salads wth some cheese and fruits. However, it’s the first time I used beets for drinks.

When put into beer, the beets produces a bright red color, making the beer look like tomato juice.

As for the flavor, I think unless you absolutely saturate the liquid with beets or leave beet pulp in the beer, you won’t get that much of the beet flavor. Also when you ferment the beer some of the flavor goes with the fermentation.

I’ve been really enjoying using beets in my beer and hope to keep using this ingredient in future beers. I’m wondering if they can be used in a sour beer, after my beets kombucha turned out pretty tasty.
